When we were doing our research for this blog on British Tomato Week 2017, we were surprised to discover that four out of five tomatoes now eaten in the UK are imported.

We understand, obviously, that the Great British Weather, contributes to this, but it’s little wonder that people say tomatoes don’t taste like they used to. They are bound to lose some of their taste if they have travelled thousands of miles to get here.

Luckily, we have some great tomato growers here in the UK and the whole point of this week is to encourage people to buy British, and we wholeheartedly concur.

There are very few foods that taste so nice which are also good for you but tomatoes are one of them. They are packed with vitamins, minerals and natural pigments, so what’s not to like?

Tomatoes are one of the staples here in the SK kitchen. Whether we are using them in our chicken tikka doughballs, chilli beef muffins or our pizza poppers.

One tip though, don’t put your tomatoes in the fridge. This causes genetic changes that alter the flavour so buy them fresh, store them at room temperature and eat within a week.

For our recipe this week, we are keeping it simple because we want the taste of the tomato to be the focus of the dish (so not spicy this time!), plus with the nice weather we have been having, it’s easy to prepare and will be even better eaten outside with a nice cold glass of white wine.

Caprese salad

Ingredients:

  • 1 pack of British vine cherry tomatoes
  • 1 pack of Mozzarella cheese (we are using balls for this recipe but sliced mozzarella works just as well)
  • Black olives
  • Olive oil
  • Fresh basil
  • Salt and pepper

Method:

1. Chop the tomatoes in half and season with a bit of salt and pepper.
2. Scatter the mozzarella cheese balls and olives among the tomatoes.
3. Drizzle with the olive oil and shake the bowl gently to allow the flavours to mix.
4. Serve with a few basil leaves and a large glass of chilled white wine.
