Do you know there is a World Chocolate Day? Well, I think every day is chocolate day!

Who could believe that so much pleasure can be had from such a simple product? In really good chocolate, there’s not lots of ingredients (although I am fond of a sea salt or chilli enhanced chocolate) and it’s that simplicity that appeals.

But it’s also just so, well, versatile. You can use it in savoury dishes (try a dark chocolate grated into a Mexican chilli – it gives it real flavour and depth) but it really comes in to its own for desserts. I can’t look at chocolate melting gently, maybe mingling with cream to make a ganache, without wanting to taste it!

It’s no wonder that chocolate sales are what they are in the UK – we as a nation just love chocolate biscuits, chocolate bars, chocolate eggs, chocolate ice-cream and chocolate puddings.

And we celebrate other things with chocolate too – Christmas wouldn’t be Christmas without finding something chocolatey in our stocking and more and more weddings have chocolate fountains. Many of us turn to chocolate when we want comfort and a cup of hot chocolate with marshmallows is a wonderful thing.

So, rather than celebrating just one chocolate day, I say let’s make every day a chocolate day and who better turn to than an expert to advise how we should treat it with respect and use it as an ingredient to make yet another wonderful thing: chocolate cookies.
